Camalaione IGT 2012 - red

The Azienda Le Cinciole is positioned in the stronghold of Chianti Classico and has the best terroir in the direct vicinity of Rempolla and Fontodi. As with all Panzano vineyards, this one has had the official certification for biological cultivation, "Certificato biologico" since 2002. CAMALAIONE is the top Cuvée of the Azienda Le Cinciole and has been produced since 2000. The vineyard CAMALAIONE has been densly planted (9000 vines/ha) which leads to a natural competition amongst the individual vine stocks and a very limited yield of 400-500g per stock. The annual production amounts to solely 4,000 bottles, which makes it a sought-after rarity. The vinification traditionally begins with the alcohol fermentation in rel. small 500l oak barrels for 20-25 days. After this the juice is transferred directly into new oak barrels for maltolactic fermentation with yeast during which it is constantly stirred (baton-age).

During the 18-20 months in barrel, the CAMALAIONE is aged and remains in the bottle for one year before it enters trade. To age it, the young wine matures in the same barrel (225l) for 18 to 20 months. After this the wine is bottles and then rests again for a minimum of 12 months before entering trade. The CAMALAIONE is a fascinating wine with a lot of power, finesse and an unbelievably rich aroma.
