Oona Caviar N°103 Traditionnel

Oona Caviar is characterised by its pure, unmistakable taste, emanating from the source of the clear mountain water and the careful breeding and processing. The Siberian sturgeon (Acipensar baerii) has the typical elongated body of all sturgeon, with a pointed snout and five rows of bony plates along its body. The animals achieve an average length of 80 to 140 centimetres and a weight of around 30 kilograms. Their colouring is light grey to dark brown on the back and flanks, while the belly is white to yellowish. The Siberian sturgeon is valuable as an edible food fish and as a producer of caviar.

Oona is derived from the Celtic language, and means unit, the unique, the extraordinary, “the most beautiful of the Queens of the Fey”. The name of the river in the Kandertal Valley hints at the former Celtic settlement of the region.
